Ingredients:
- 2 large zucchinis
- 1 lb ground beef
- 1/2 cup chopped onion
- 1/2 cup chopped green pepper
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes, undrained
- 1 can (8 oz) tomato sauce
- 2 tbsp tomato paste
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 8 oz cream cheese, softened
- 1/2 cup almond flour
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cups shredded mozzarella cheese
Instructions:
Preheat the oven to 375 degrees F.
Cut the zucchinis lengthwise into thin strips, about 1/8 inch thick. Set aside.
In a large skillet, cook the ground beef, onion, green pepper, and garlic over medium heat until the beef is browned and the vegetables are tender. Drain any excess fat.
Add the diced tomatoes, tomato sauce, tomato paste, basil, oregano, salt
