目前衛福部已公告13項健康食品保健功效/功能評估方法以及 1 項草案。本書以各項公告的保健功效/功能指引為依據，特別介紹健康食品功效性評估的基本常識、理論基礎、相關的保健素材與開發實務，使業者/讀者更能充分瞭解進行這些產品功效試驗的步驟與要求。每一種健康/保健食品依素材的不同，分別僅能在某段期間內保有其功能性與安全性，因此，衛福部另外公告健康食品之安定性試驗的操作指引以及安定性試驗方法的確效項目(因素)。本書參考美國膳食補充品安定性試驗指引草案，進一步闡述衛福部公告指引。每一項食品無論業者宣稱的營養性或功能性，對消費者而言，最重要的是安全性，因此，為了保障消費者的健康，衛福部特別提出健康食品安全性評估分類及毒性試驗項目與方法指引。本書以公告的安全性評估方法指引為基礎，根據編著者實驗室的動物試驗流程以及相關的資料改寫成保健食品安全性的實務操作方法，作為業者規劃或實作安全性動物試驗的參考。食品安全的防線可以從良好衛生規範(GHP)、危害分析重要管制點(HACCP)及風險分析(RA)做起，這些都是涉及到食品「從農場到餐桌」各環節的微生物檢驗。本書介紹健康食品的衛生安全操作方法以及優良製造規範 (GMP) 的實施。本書特別介紹美國藥典所訂定的「膳食與營養補充品」之衛生安全檢驗以及微生物限量標準，並且列舉膳食補充品的名稱，可有助於從事進出口健康食品貿易業者瞭解歐美國家的相關法規。衛福部已於 2018 年公告特管辦法修正草案，新增糞便微生物群移植(糞微菌叢植入，fecal microbiota transplant, FMT)治療。當前，全球業者已經開發活菌生醫產品趨勢的發展，此書特別引用中國大陸 2020 年出版的中華人民共和國藥典中之「活菌生醫產品總論」，並以示意圖闡述動物試驗與病原菌的檢測，作為國內業者開發此類產品的參考。用中國大陸2020年出版的中華人民共和國藥典中之「活菌生醫產品總論」，並以示意圖闡述動物試驗與病原菌的檢測，作為國內業者開發此類產品的參考。市面上同類型的健康食品琳瑯滿目，為了促進產品的銷售，業者需要進行宣傳廣告，不僅所費不貲，並且非常容易觸法而被處以鉅額罰款、長期訴訟或刑法追訴。有鑑於此，此書彙整衛福部公告之有關健康食品廣告、標示法規，以供業者參考。
